Dal Tadka, which literally means "hot spice" is said to have originated in Northern India. It is a mix of various whole spices, differing from region to region. Depending on the ingredients its colour may vary from deep orange to earthy brown.

Cooking Uses

Dal Tadka is used to season and add an aroma to dishes. The timing of its addition to the dish depends on whether it has been roasted before or not. The ground Garam Masala is usually roasted before blending. It is used in a variety of dishes from meat and poultry to egg curry, and vegetables or paneer.
